Toasted pecan halves

We had WAY to many pecan halves left over from Christmas. My DW usually bakes and makes candy and such to use up several gallon ziplock bags full of pecan halves, this year she had two full bags leftover. Freezing them is o.k., but they usually have a little taste to them after freezing. She talked me into looking into making something with them so I looked up "toasted pecan halves" on the internet and found several simple recipes. Here is the basic recipe:

3 cups pecan halves
4 tablespoons of unsalted butter
tablespoon of sea salt (or in my case, a little more to taste)

Preheat oven to 325, melt butter and pour over pecans and stir. Add salt and stir again, pour on cookie sheet, spread out in a single layer (I used a sheet of parchment paper and am glad I did). Cook for 20 minutes and remove, let cool completely.

I made two batches last week and they are almost gone......
  • You could make up some candied pecans just like they sell at fairs. I even make mine low carb with Splenda if that is your thing. They are pretty darned good. Cannot find my recipe but look on the Internet and you will fine a variety to choose from.
