So, are you talking 16 inch diameter or larger?
I use a blue storage container type under the bunk in my truck camper. They're great for everything, dog food, clothes.... & they stack. One could put your griddle on top of one.
I would use either cloth or cardboard for cushioning the griddle. Fabric would wipe of easier and slide less, JHMO.
