Use Water Pan for Smoking Turkey?
I am going to attempt my first smoked turkey breast (bone in) this year and I am wondering if you guys use the water pan or not. If so, do you just use water? I have thought about an apple juice/wat...

Thanks a lot guys, as always some great info. Just for kicks I plugged up the smoker and put in a pan of water and let it run for about 2 hours today just to see what the temp would get up to. It is 35 degrees and raining right now and the max temp I could get was 235 degrees, the smoker is on my carport. I am thinking about adding 4 - 5 lumps of charcoal that has been pre-lit in my charcoal chimney around the burner, but not touching it, to get the heat up on Thursday morning.
I would love to have a propane smoker but this one was free. With a new 16 yr old driver in the house, the cheaper the better!
BTW, it has no thermostat, just plug it up and go.
