My wife suggested that we stay in tonight to avoid the madness at restaurants, so, I've seasoned a small prime rib that I had in the freezer. Fresh green beans and twice baked potatoes will round out the main meal. That thing looks awesome. Would love to cook one.

No problem. I rubbed the roast with olive oil and then coated with garlic powder, onion powder, kosher salt and pepper. I smoked it at 235 degrees for 3 hours, internal temp of 135. Wrapped in foil and let it rest for 15 - 20 minutes.

So, Dave, do you do all the cooking in your house? You make some pretty good meals!

She doesn't go as extreme as I tend to do but we share the cooking . She also takes credit for cooking a couple nights a week warming up my leftovers. Lol!

Those look good too. But ever since our trip to Great Britain we've been hooked on chips served with malt vinegar and salt alongside our prime rib. Deep fried wedges of potatoes with salt and vinegar hits just the right counterpoint to the smoky rare beef.

Everyone's different.

Thanks. Actually, my wife and I are good team. She can cook. She doesn't go as extreme as I tend to do but we share the cooking . She also takes credit for cooking a couple nights a week warming up my leftovers. Lol!
