I suppose it depends on what is excessive wind or cold. I really can't say I've a lot of trouble with either. I have set a cooler or something up to block some wind, but I've never had a problem with cold except for one event. We did use our DO in minus 30 a couple of times and had increase the briquettes, but from about 40 up, never a problem.
I've baked biscuits many times in my 12" DO's, one is AL on cool mornings with no problems.
Again I'm not questioning the fact that a cover could be an asset at times, but often enough to offset the price and something else to keep tract of?
