Teri, you might try this pork dish...not chicken but it is "the other white meat!" Serve this with some roasted red potatoes and a green salad for a complete meal.
WW Molasses-Grilled Chops with Horseradish Sauce
4 4 oz. lean, boned center-cut loin 1/4 c. fat-free mayonnaise
pork chops (about 1/2 inch thick) 3 T. fat-free milk
1/2 cup low-salt soy sauce 1 T. prepared horseradish
1/4 c. molasses 2 t. finely chopped onion
1 t. garlic powder 1/4 t. ground pepper
Cooking spray
1. Place pork chops in a large shallow dish. Combine soy sauce, molasses, and garlic powder; stir well. Pour mixture over chops, turning chops to coat. Cover and marinate in refrigerator 4 to 8 hours, turning occasionally.
2. Prepare grill. Remove chops from dish, discarding marinade. Place chops on grill rack coated with cooking spray. Cover and grill 5 minutes on each side or until an instant-read thermometer registers 160 (slightly pink). Remove chops from grill, set aside, and keep warm.
3. Combine mayonnaise and remaining 4 ingredients in a small saucepan. Place over low heat, and cook until thoroughly heated, stirring occasionally. Spoon horseradish sauce over chops.
Note: I usually don't do this outside but use my grill pan on the stove.
Yield: 4 servings (serving size: 1 pork chop and 2 T. sauce). Points: 6
