Here's an idea for that all important breakfast (the meal that all of us want and need but never have the time or the inclination to get up and fix!)Two of these with coffee or tea should get you off to a good start in the morning.
Bran Muffins

Ingredients
2.5 cups whole wheat flour
3 cups Fiber One or extra fiber All Bran cereal
1 cup boiling water
1 tsp salt
2 tsp cinnamon
2.5 tsp baking soda
1/2 cup unsweetened applesauce
1/2 cup unsweetened pumpkin puree
2 egg whites
3/4 cup splenda
1/2 cup sugar free fat free vanilla yogurt
1 cup skim milk
Instructions
Preheat oven to 400 (375 if convection). Spray muffin pans with cooking spray.
Pour boiling water over cereal & mix until mushy
In a separate bowl, mix the other dry ingredients together. Add wet ingredients, followed by bran cereal. Mix until completely incorporated. Spoon into muffin pans & bake 15-20 minutes until muffins pull away from the pan sides.
Special Notes
If you like very dense & moist muffins, these are good. The recipe builder indicated 1 point per muffin based on the ingredients I use and they are quite big & filling. They are very forgiving of ingredient measurement changes like more yogurt or pumpkin. They also take well to many other variations, including extra applesauce, deleting pumpkin, adding bananas, raisins, nuts, chocolate chips, regular yogurt/sugar etc. This will change the nutrient and points value.
