I may have posted this one before but we do enjoy it when we just have to have a "dog."
Chicago Dog Salad
This is Rachel Ray's recipe modified for fewer points. 4 servings - 4 pts each.
1/4 cup Heinz Yellow mustard
2 Tbsp vinegar
1 tsp sugar
2 Tbsp vegetable oil
1/2 medium red onion(s)
1/2 pound packaged coleslaw mix (shredded cabbage and carrots)
1/2 head romaine lettuce
2 medium tomato(es)
3 items Del Monte Dill Whole Pickles
8 fat-free beef or pork hot dog
In bottom of large bowl, combine mustard, vinegar, sugar and 1 T of oil. Add all except hot dogs and toss. Season with salt and pepper and reserve. Heat a large nonstick skillet over med-hi heat. Add in 1 T veg oil and arranged sliced hot dogs in a single layer. Sear a couple of minutes on each side. Drain on paper towel. Mound up salad on plates. Top with seared hot dogs.
