here we go..... my measurements were not exact and would vary depending on how much cuke you use.
1/4 cup Karo lite or simple syrup- eual parts water and sugar boiled together until slightly thyickened)
1/4 cup white vinegar or rice vinegar
1/2 tsp chili flakes
2 cukes, peeled, seeded, diced in half to quarter inch dice
combine all and refrigerate overnight.
I think there are several different versions. This is what I made to accompany chicken satay. Some versions add chives or scallions or green onions, some use real hot peppers, some add basil, whatever.
