Hey Leo, can you post the peanut butter marinade/recipe (or whatever it is) you mentioned? I LOVE peanut butter and peanut sauce and would be interested trying that dish. THANKS!
I don't really have a recipe. I use these ingredients, measurements are approximate and to taste.
Marinade for chicken or beef:
equal parts soy sauce and wine and sesame oil
some fresh or granulated garlic
onion powder
chopped green onions/scallions
black pepper
Sauce (for grilled marinated meat, or on noodles)
1/4 cup peanut butter
1/4 cup sesame oil
1/4 cup soy sauce
1/4 cup rice vinegar or white vinegar
1/4 cup Karo or honey
minced fresh garlic or granulated garlic, 1 tsp
1 tbsp onion powder
black pepper
chili flakes or a 1/2 tsp chili oil
juice of one lime (not bottled)
lime zest of you feel ambitious
chopped green onions
lots of fresh cilantro, chopped
chopped peanuts or cashews
sesame seeds, toasted
Mix everything from peanut butter thru lime juice. Microwave and stir a few times till well combined and thickened a bit. Stir in other ingredients. Toss with asian noodles (cooked) or baste on grilled meat.
You can use sesame paste (tahini paste?) vs peanut butter but I can't always find it.
