I can see how that would work as well. I hadn't really thought about the crockpot but it would certainly serve this dish. I have vowed never again to use my crockpot with chicken though and sometimes I substitute chicken for the pork in this. My crockpot makes chicken almost powdery dry and I really don't like the texture, pork would be fine though.
