My boy scout days taught me only a knife is really necessary!
What we use most is a fish or burger holder, we've had several. 2 grates that hold flattish food pieces. Then with the heavy leather mitt, you just hold it over whatever is hot. Good wood smoke flavor, infinitely adjustable cooking. Easy cleanup by burning off anything stuck on.
I haven't tried using it for s'mores, cause we carry way too much other stuff!
