Chiliquiles
Saute red peppers and sweet onions in an oven proof frying pan until soft.
Add cumin and oregano.
Add red (or green) salsa and chicken broth and cook until well mixed and warm.
Add tortilla chips (deep fried restaurant type work the best) and gently fold into the salsa pepper onion mixture until well coated.
Break eggs evenly over the surface, and bake in a 350 degree oven until the eggs are cooked.
Serve with sour cream, Mexican Cotija cheese, sliced radishes and fresh cilantro.
It's my favorite breakfast in Mexico. It's a great way to use stale tortilla chips, uses one pan, and left over chicken, beef, or pork can be added.
