Break a dozen eggs into a 12 cup muffin tin and bake (350° for about 10 min. until just firm). Serve them at the table with cooked bacon, sliced ham, cheese and English muffins or biscuits. Everyone can make their own breakfast sandwich.
Or, do it Mexican style by scrambling the eggs with a can of black beans and some taco seasonings. Serve it at the table with salsa, sour cream, grated cheese, and tortillas. Custom breakfast burritos for everyone. Less work for you.
(Sorry, but I can't do the plastic bag/omelette thing. The thought of that plastic leeching into my eggs is enough to ruin my appetite. Just sayin'.)
