What's for Breakfast?

What's for breakfast? Sometimes we camp with friends for a weekend and usually Saturday morning someone wants to make a big breakfast. We eat make something, eggs or bacon or potatoes, etc... This is time consuming by the time things are cooked and we sit down to eat. It just tends to be a big production I'm looking for something easier to do for breakfast on Saturday morning. I thought about something in the crockpot but didn't find anything.
  • I prefer just coffee and Oatmeal for breakfast, both while camping and at home. Sometimes a scrambled egg with toast.
  • I like a cup of coffee and a danish while sitting outside the camper around last nights campfire.

  • This is an especially good casserole for a winter morning:

    You can use diced/cubed ham instead of the sausage (makes prep work much easier too)

    Ingredients

    Butter, for greasing pan
    1 tablespoon olive oil
    1 pound hot Italian turkey sausage, casing removed
    1 medium onion, finely chopped
    1 medium red bell pepper, seeded and finely chopped
    One 1-pound loaf rustic French or Italian bread, cut into 1-inch-thick cubes
    2 cups grated whatever cheese you like (cheddar, etc)(8 ounces)
    6 large eggs
    2 cups whole milk
    1 cup heavy cream
    1 1/2 tablespoons sliced fresh chives, plus more for garnish
    Kosher salt and freshly ground black pepper

    Directions


    Butter a 4-quart baking dish.

    In a large skillet, heat the oil over medium heat. Once hot, add the sausage, onions and bell peppers. Cook, while stirring, until the sausage is cooked through and crumbly and the onions and peppers are soft, about 6 minutes.

    Add the bread to the prepared baking dish. Stir in the sausage and pepper mixture and the cheese, reserving a bit of cheese for the top.

    In a medium bowl, whisk together the eggs, milk, cream, chives and some salt and pepper. Pour the mixture evenly over the bread and give a little stir to make sure it's evenly distributed. Sprinkle with the reserved cheese. Cover with plastic wrap and let soak for 30 minutes.

    Remove the casserole from the refrigerator and let come to room temperature for 30 minutes. Meanwhile, preheat the oven to 350 degrees F.

    Bake until the top is puffed and golden and a knife inserted in the middle comes out clean, about 1 hour. Garnish with more chopped chives before serving
  • Found this one by google never tried it but when I camp I do eggs etc.... Biscuts n gravy or cereal


    Crockpot Breakfast Casseroles

    Crockpot Breakfast Casserole
    Ingredients:

    1 dozen eggs
    1 cup milk
    1 package (32 oz.) of frozen hash brown potatoes.
    1 lb of bacon - cooked, drained and cut into pieces.
    1 lb of sausage, browned and drained
    1/2 cup green onions - diced
    1 green pepper - diced
    3/4 pound cheddar cheese - shredded
    1/4 teaspoon dry mustard
    salt & pepper to taste

    Directions:

    1. Layer potatoes, bacon, onions, green pepper and cheese in the crockpot in two or three layers.

    2. Add cheese.

    3. Beat the eggs, milk and mustard, salt & pepper together.

    4. Pour over the whole mixture.

    5. Cook with slow cooker on low for ten to twelve hours or until eggs are set and thoroughly cooked.


    Slow Cooker Breakfast Casserole
    Ingredients:

    1 doz eggs
    1 cup milk
    1 bag (32 oz bag frozen hash brown potatoes
    1 lb bacon, cooked crisp
    3/4 cup chopped sweet onion
    1 1/2 cup cheese - shredded (cheddar, jack, or both)
    salt and pepper
    garlic powder

    Directions:

    1. Spray inside of crock pot with nonstick spray.

    2. Layer potato, bacon, onion, cheese 1/3 of each 3 times.

    3. In a large bowl, beat eggs with milk and seasonings.

    4. Pour egg mixture over the ingredients in the crockpot.

    5. Cook on low 10 - 12 hours, until eggs are set and thoroughly cooked.
