What's your favorite recipe using turkey leftovers?

What about Turkey Divan - made with chunks of turkey, broccoli, onions and lots of cheese + a can of cream of mushroom soup.

Of course you could always freeze leftovers for later - I also freeze leftover mashed potatoes as they are not my favorite to have every night.
