What's your favorite recipe using turkey leftovers?

We ended up with a smoked turkey also that was was minus most the breasts. The kids brought it and didn't want to take it home so I picked it and threw the carcass in the pot with the other one.
After some thinking I've decided to mix it with some smoked sausage, roux, okra, etc and make gumbo later this week. I think the smoked turkey should go well with the sausage and gumbo seasonings.
