I have been cooking with PVC's for 20+ years. They are probably the most underrated kitchen device on earth for a number of reasons:
Efficiency- They reduce your cooking time by 70% saving fuel and keeping the kitchen cool
Flavor - You can infuse all sorts of flavors deep into the meat
Economical - You can cook less expensive cuts of meat to tender perfection saving big $$$
Healthy - Excess fat and grease is cooked out of meats, poultry etc., (and remain in the bottom of the PC producing healthy delicious meals from the cheaper cuts)
Safety - If you choose to cook underway there is no safer method. Should a bump or sharp turn send it off the stove you simply pick it up and replace it on the stove top. think about a pot of chile in the same scenario. :E
I own three, two 6 quarts (one for home one for the RV), and an 8 and use them about once a week. Avoid aluminum and get a stainless steel model, around $60 for a 6 quart. Look for one that has the smaller footprint and is a little taller as this will enable you to simultaneously use the other burners burners on you RV's stovetop.
No, they do not blow up any more. Yes, your mom's probably did but how many decades ago was that? Ignore the PC recipe books when they talk about adding "X" amount t of water.
Psssst... I'll let you in on a little PC secret: Water adds no flavor! Try beef, chicken or vegetable broth/stock, fruit and or vegetable juices, wine, beer etc., you get the idea. All of these will enable you to infuse amazing levels of flavor into whatever you cook. OK, you can use water if nothing else is available but call that "Plan B". :B
