I use pellets to heat my stick and brick and am very familiar with the principles of the stoves. If you want lots of heat and little smoke you open the air intake, if you want to smoke, cooks low and slow. The inefficient burning produces the smoke, an option is to add a "dish of chips" that smolders over the fire,but does not burn. I prefer a lighter smokey flavor, so I use the slow method. I have seen a super grill called "Wood Flame" that heats with wood in a pellet like burner pot. I don't have one and will not likely be able to afford one at about $350. They are made in Canada, and I have never heard anything bad about them.
