JRS&B - Let me first say that I think you have picked a terrific place to build. Used to keep a boat at Burnt Store Marina. The Punta Gorda/Port Charlotte area is absolutely my favorite part of Florida. Make sure to get over to Cabbage Key sometime - and have a spare dollar bill or two in your pocket !
My house in Florida had a pool with the 'birdcage' and I used both a regular grill and also a smoker (not a pellet type) under the cage on a regular basis. I would normally pull the one I was going to use out from under the lanai to an area still under the birdcage. I never had any kind of problems from using either grill. And if there was any kind of residual ash clinging to the birdcage, I am sure it was washed off during the TORRENTIAL rainstorms that occurred almost every afternoon at around 4:00 during a good portion of the year.
The one thing that will get all over the cage is algae. It's a humidity thing. And then the rains will wash it into the pool and cause an algae bloom if you get caught a little low on chlorine. So my advice is to spray a bleach solution onto the entire birdcage (both the sides and the top) about 3 times a year and then rinse it off.
