In my experience, it's much harder for dogs to adjust to blindness when it happens quickly rather than a slow gradual process. Stairs do add an extra wrinkle, but most do adapt.
If you are still noticing increased water consumption, you may not have the control of glucose levels you need. Talk to your vet, this isn't always an easy process. You may need to switch doses or types of insulin. Also, checking glucose levels at home can be useful in achieving control.
