Calvin - I do the same thing with my dogs. We avoid the "dog walk" areas at rest stops - opt for a remote patch of grass instead.
The best thing I've found for nighttime potty stops, is a head lamp. One of those lights you wear on your forehead? That way your hands are free to scoop your target and you don't lose sight of it after dark. Also helps you find the clean spots to walk through....
