Garmin automotive GPS offer a trip log / gps trail feature. You can download that data into Garmin Basecamp and plot your travels on a map. Really handy for review if you forget for a day or two to make notes on your travels.
Otherwise, as ancient as it sounds, a moleskine or similar and a good pen work better than any app. Record metrics about the day's travels such as distance, fuel, temperature, neat things spotted. Then you can put it into a spreadsheet on a rainy day, and make blog posts or youtube about it.
Or use the Google NOTE TO SELF feature, for example.
"Okay Google note to self Today we drove 200 miles from Sometown through Bigcity before stopping in Anyplace."
Spreadsheet-wise, Google sheets is free and now works without Internet on both laptop and any smartphone.
