I have a surveyor style aluminum tripod with an aluminum mounting bracket. It is very light and very stable and very easy to level.
I now have the latest SL-3 SWM LNB that has a small round LNB that stores much easier. I replaced the bolts that hold the dish on with stainless steel carriage bolts and wing nuts and take the dish off for easier stowing. With Dishpointer AR on my iPhone I can set up in 5-10 minutes max.
There is a thread here somewhere where a guy converted the old oval dish to an HD LNB and it worked ok but you lose some strength.
I don't have a problem storing the big dish and want all the signal I can get what with Florida's clouds..
