A spot beamed transponder will show 0 so it's very common to see a few. The signal strength numbers vary because the transmission power is slightly different on various transponders. Really low numbers (not showing 0) are likely spot beams as well and you are approaching the edge of that beam.
Trying to use something other than Transponder 1 to point the antenna is not beneficial. Every channels is assigned its own transponder so even if you use transponder 7 so you see a 100 signal, as soon as you get the pointing screen you will go off that transponder and onto the one assigned to that specific channel.
