Well, running HDMI cables throughout your RV is one solution for HD TV, but you can use the existing coax in your coach -- ditch your DISH VIP receivers for a Hopper and two Joey receivers.
For sound, I'd suggest an AV receiver with at least 3 HDMI inputs. You can try hooking up your RV's speakers, but an AV receiver might over power them.
