Was the "no" answer for the idea about the wifi card? Like your Verizon aircard acting as the modem and a smart camera connecting to it wirelessly?
Seems like your last option is my only option. Just record and if anything is missing then watch the video to see if there's a description of the person or if you can even see them walk away with your item back to their RV.
