It's true that things default to MS programs but how else would they do it? If you try to open a picture or a video, would you prefer it to not open at all or default to opening with an MS program?
I run lots of 3rd party programs on my Win 8.1 and Win 10 (Win 7 too) computers and don't necessarily depend on the ones that MS provides. Windows has always allowed you to specify what programs open which file types.
