It's true that things default to MS programs but how else would they do it? If you try to open a picture or a video, would you prefer it to not open at all or default to opening with an MS program?
I run lots of 3rd party programs on my Win 8.1 and Win 10 (Win 7 too) computers and don't necessarily depend on the ones that MS provides. Windows has always allowed you to specify what programs open which file types.
During the upgrade they reset your previously selected defaults to MS programs. For example, if you set Firefox as your default browser in Win 8 the upgrade changed it to Microsoft Edge. It does give you the option to leave the defaults the way they were, but if you don't explicitly take this step then the defaults are changed. And since many people won't read things very carefully their defaults get changed. It didn't have to be this way, that's just how they decided to do it.
