Most times these are security patches, meant to protect both your machine and everyone else's. The planet is full of millions of un-patched/compromised machines, a LOT of the reason comes down to uneducated owners and Microsoft has decided, and I must concur, that they need, in most circumstances to FORCE upgrades onto the machines.
If you really want to put off upgrades Win10 Professional/Enterprise will let you do that. Consumer additions will be patched as required.
I have been forcing my users at work into upgrades for close to 20 years since NT4 and have had no ill effects from those upgrades except the occasional driver issues. I can NOT say the same thing about my users personal machines as they are brought to me on occasion with more than a FEW issues all related to not taking upgrades and not keeping AV software up to date. Some/most require completely formatting the machines to even get them functioning again, most people losing incredible amount of personal data and 10's of thousands of photographs(no one backs up either).
Microsoft is doing its users and everyone else a favor. Get used to it, this is the way things are going to be will ALL commercial operating systems from here out. Apple and Android do the exact same thing.
