One good reason -- if you're on a metered connection, updates may come anytime and gobble up your data. Also, Win 10 is constantly spying on you and sending the data back to Mickey-soft, which also runs up your data usage.
Set your connection to metered to delay the updates and also its very easy to turn off all the other stuff. Its been discussed a million times on how to do it.
