We eat nothing pre made while camping, to us, part of the fun of camping is cooking outside, although we do it a lot at home also.
You don't have to pre make meals if you like cooking outside (part of the charm of camping for us as well) but setting up a new to your family RV needs to happen both inside and out. You stated your wife does most of the cooking so let her also join the learning curve. She's going to have new to her appliances to setup as well as cabinetry.
Prepping for said meals at home cuts back on kitchen drudgery after setting up especially with new equipment.
For me that means chopping onions and green peppers in advance and flash freezing; floating crushed or minced garlic in olive oil; beef for stew cut while partially frozen, etc. Can be a big help for whoever does the cooking.
As well, first night is generally the culmination of a wake up before dawn, load the gear, navigate the route and any secondary routes if there is a traffic back up w/ the first; un-load, acquire firewood and fresh produce, puhleese let me collapse in the chair and not cook day.
We often have a mufuletta type sandwich, soaked in olive oil, and maybe soup(made at home) first night so that the cook can wake up semi-refreshed for the morning. Now I'll further admit that of late, 1st morning on site breakfast has become yoghurt, a fresh fruit plate and a granola or toaster pastry topping instead of bacon and eggs but so far the" peoples" haven't complained that I haven't "cooked" for a full 3 meals and are still happy. Oh and so am I;).
Don't forget to pack and replenish your tent days' first aid kit.
