The 30 is all you need.
We run our AC unit and the microwave many times together.
If your trailer is 30 amps, the only time you need a plug between the 50 and your thirty is if all that is available is 50 Amps.
Even if you did use the connector, if you exceded your thirty amp capacity, your main breaker will trip.
