You do not have enough truck to pull anything substantial. I would consider renting a popup, tent trailer. See how the first trip goes and then decide if you want to get more involved. If you want to keep expenses down and just plan on a few trips, get a tent. The grandkids will love the experience.
For some of us RVing becomes an important part of our lives. We like the experience and being outdoors. You do not seem to have those interests so I will guess this is not going to work out well.
