As to changing tire on the camper... I found that my truck's bottle jack works fine, and it has the extended rod that easily reaches under the camper for cranking up and down. I keep a proper size socket for taking off the lug nuts on the camper in the tool box I keep in the camper. You don't have to lift the tire much at all on a dual axle trailer to change it.
I use wood planks similar to many posts here. I got two lego block sets from someone years ago. I don't usually use those for leveling, but they are great for under the stabilizers, under the tongue jack, and for other stuff like putting under the step at camper door (older camper at this point, step is bouncy without extra support), leveling the picnic table or grill. And for the rare times when I need more height than the planks provide.
