Have you looked into something like a Scamp? Some of their layouts look to me like they might meet your needs and wants fairly well, and should be able to be towed by your vehicle, particularly if you pay attention to not carrying too much other stuff or weight (in either the trailer or the vehicle).
There are some other companies also making similar all-fiberglass small trailers that are also well worth considering. These styles tend to be somewhat lighter than conventional travel trailers, and require somewhat less maintenance as there are far fewer seams to keep caulked, etc.
