There is no way you will need that big a generator for your needs. Keep an eye on CL for a smaller one that will do the job.
When you are looking for your van look for what is called E track on the walls. It is bracket system that is quite universal in the logistics world. You can find shelving, straps and anchoring devices compatible and could save fabrication effort.
