#1 - Not every camper is the same. Our Hybird Travel Trailer had a standard gravity fed fresh water tank and a separate city connection for when hooked up to a hose. Our current Motorhome has 1 fresh water inlet. There is a control board with 5 switches depending on what I need to do. Fill the tank, flip a few switches this way, use the water from the tank, flip the switches another way. Use a city connection, flip them another way, etc., etc. There is no gravity fill on our camper. There is also a switch combination that allows us to fill the fresh water tank using the pump.
#2. Don't leave the blank tank valve open. Dump as needed. We are a family of 4, our 32 gallon black water tank holds about 1 weeks worth of waste. When we camp seasonally, we leave the gray valve open. Our campground has a lake and a pool, so we 1 or two showers a day. Our gray tank is 36 gallons, but with 1 - 2 showers a day for the 4 of us, it fills up in less than 2 days. That's a hassle. When we camp short term, I leave the gray tank valve closed and only dump as needed.
#3 - I think DrewE covered it very well. We do not use anything. We camp in mostly modern parks and resorts and have never had a problem in over 10 years in a RV. If we camped in older parks more often, we would probably invest in an EMS system.
