First time traveling through Colorado and freezing temps

I think your problem will be the water lines and the pump. The water in them will freeze before the tank will because of the lesser volume. Find the tank drain and drain first. Then pump RV anti freeze thru the lines till pink comes out all the faucets and also flush your toilet until pink comes out.

Drain the hot water tank and bypass it before adding RV antifreeze. Otherwise it will just collect in the hot water tank.
