Traveling in the middle of winter I would stick to the interstates until below the snow line. Wait for a weather window lasting several days, then go south in a straight line until below the snow line, THEN go west.
fill your propane tanks.
Keep some non-freezable food in your rig just in case.
I always traveled in winter with a couple sleeping bags.
M.02 opinion - I would use the RV as a passenger vehicle ONLY until below the freeze line. Stay in motels while traveling. You will want a good night's rest, a nice HOT shower in the morning, and a nice breakfast. No worries about frozen water lines. No need to heat the rig at night, etc.
