I don't see the non hookup as roughing it by any means.
If you go without electric hookups you lose 120V so you lose the air conditioner, microwave, and possibly the DVD player and TV.
without water hookups you lose unlimited water and have to live off your tank.
without sewer hookup you have to go to a dump station to dump the tank.
But the bathroom still works, the furnace still works, the shower still works, the water heater still works, the stove top and oven still work, the lights still work, the refrigerator still works, the vent fans still work, the porch light still works.
Consider trying to break them in easy. There are many parks that are partial hookup. I believe that electricity/water are the most common. So in one of those parks you only lose the ability to dump the tanks in your actual campsite and have to stop at the dump station on the way out. Everything else works the same as if you are at a FHU site.
Here's a plan for you, think baby steps.
Go to the full hookup site and tell your husband you would like to try to make it all weekend before you dump the sewer (black) tank. Heck you might already be doing that anyway. :) If you survive that you're one step closer to disconnecting.
Next trip go to FHU but fill the fresh water tank when you get there. Now turn off the water spigot but leave the hose connected to alleviate any separation anxiety (just joking about the anxiety ;)) Now just live off the fresh tank and the sewer valve closed. If you run out of water just go turn the faucet back on.
After a few trips like this it's time to completely pull the plug. :)
Sewer hose hooked up but valve closed.
Water tank filled but hose still hooked up and turned off.
Electricity hoked up but breaker at the post turned off.
I would do the last step, (no electricity) at a time of year when you won't be needing air conditioning and only mild heater use.
Make it through this and you're home free. :B
I'll be the first to admit though that it's difficult to go to a FHU site and not just hookup and go. But then again I do a lot of non hookup camping so when I'm on a FHU site I like to be able to relax my water usage a bit and leave more lights on and such.
Anyway you said you are persistent so it sounds like you know what it takes to get your husband moving. You know being a man I can tell you that I do believe that we are motivated by our stomachs. Maybe promise him his favorite dinner or something that he doesn't normally get if he lets you try running off the tank instead of the hose.
