I've never seen the ratio of tanks as you state for the 'Reserve'. If you're boondocking having a 80 gal fresh water and 40 gal gray/black would be much better. If you only have a 40 gal fresh, how are you going to put 80 gal in the gray and 40 gal in the black? That's strange.
The fresh should always be bigger, then the gray, then the black. If your gray is getting full, you can always dump dish water into the black, which is always the last to fill.
We boondocked/dry camped 90% of our 16 years of full-timing. That's how our ratios were and we never had problems with having fresh or filling the other two. Good luck!
