If you're going to only go where there are fresh water hookups, then the 1F/2G/1B ratio is going to be the most useful. You're hooked up to city water, so you want more capacity in the waste tanks so you don't have to dump as often.
If you're going to boondock or dry camp, then the 2F/1G/1B ratio is going to work best. This is because your fresh water tank will empty and your waste tanks will fill at the same ratio. So, when you go to dump the waste tanks, you'll also fill your fresh water, and then head back out to nowhere.
How big the tanks need to be are dependent upon your personal tastes and needs. A family of five will usually need/want more capacity than a solo person. Someone who is going camping (in the rustic traditional sense) will usually need less capacity than someone who is going sightseeing.
