There is a recent thread on this forum about using various methods to refill the fresh water tank when you run out.
I've camped at a COE CG with 50A electricity and no water connection available. We filled the FW tank as we pulled in, and every five days (were there 22 days in 'non-peak' fall) - I took my 40 gallon pillow tank over to the water fill - put it on top of the truck cab - filled it with fresh water and drove over to the TT and filled the water tank by gravity drain.
I understand many boondockers will also refill their fresh water to stay longer if they have sufficient black and gray tankage. (I had to use my sewer tote a lot).
There was even a thread on this forum recently about moving some of the gray water to the black water tank to extend a stay at a boondocking site.

BEER. :D
Actually, I have a 48 gal FW and 160 gal (4x40) of blacks and grays. Normally I'm on "city water" so the big tanks mean I drain less often. We carry bottled water for coffee and drinking (we don't drink from FW tank)and then there are the other beverages we like. Our FW is mostly used to shower and wash dishes.
All depends on how you use your trailer.
