Most of us RVers are pretty spoiled. We can't conceive of not having all the comforts of home. However at every CG there will be people camping in tents, or with pop-ups, old TTs, tiny TTs, etc. I've spoken to people with A-Liner folding trailers, and they get great MPG. Typically towing with a medium SUV or something with a V6 engine. Someone on here tows one with a Pontiac Vibe or its twin the Toyota Matrix.
The VW Toureg diesel gets very good MPG and has a lot of towing capacity. The VW Passat (I think it is) diesel makes a good tow vehicle for smaller things like pop-ups and A-liners, but towing is not factory approved, so you have to turn on the Google machine and read about how the owners figured it out and what they have done.
I have daydreamed about the kind of rig you are considering. The HiLo looks good on paper but it's still pretty big and heavy. I'd look hard at a fiberglass egg TT or an A-Liner, and then make sure I had enough tow vehicle to handle it. Don't ever max out the tow vehicle. Leave yourself a healthy margin. It's not such a big deal for a short tow to the lake, but for actual traveling, you will be asking for nuisance and breakdown if you are maxed out.
