In my many years of rough-road RVing at slow reasonable speeds, I have still had every cabinet in the camper do a self-eject at one time or another. That includes the refrigerator.
#1 packing rule: Prevention. Do not allow anything to get a run at the door. Most of my cabinets have baskets or boxes inside them now and that helps to keep things in place.
I added a complete second set of latches, so now each door has two.
I carry a roll of blue masking tape, the kind that does not damage finishes. It will help to hold a door shut until you can fix things properly.
I suppose that tape could also hold windows shut temporarily. But don't your windows have latches? You are not driving with windows partially open, are you?
