There's no logical reason why having the fridge on would be bad for it. The moving parts in an absorption fridge (namely, ammonia and water and hydrogen gas) don't wear out with use. This presupposes, of course, that said fridge is sufficiently level.
That said, it makes little sense to me to leave it on for long periods of time unused because of the electric usage. A dorm fridge or small residential fridge in the garage would pay for itself in short order. An RV fridge on 120V power uses something like 5-6 kWh per day, or very roughly 2000 kWh per year to run. A standard low-end residential fridge (a 17.5 cubic foot model is what I looked up) is somewhere around a fifth of that electric usage, for the sake of comparison.
