Do I need to plan to carry in water for national parks? Full fresh at all times..then you can camp anywhere
Where to fill up? Any potable supply. Watch for them...and dumps.
How hard is it to add a second battery to store power for being unplugged? Easy. But batteries should be matched as to age and size. How will you recharge? Solar or generator? Don't go below 50%.
How much additional time do we need to allow when traveling from park to park (Mesa Verde, Grand Canyon, Zion, Bryce, Arches) during the summer? Not clear on this question. Fast as a car? No. Add 33%.
Do any of those national parks have any wifi access? Usually no. Maybe near an NP legacy hotel.
If not, which I suspect, where can you get access? Where your phone works. Fair to goos coverage.
What is the opportunity to get gas along that general route? Gasoline isn't a problem.
