If it is in an E series chassis (E350 or E450), it has 2 valves. The 3 valve V10 was never put in a van body. I believe it had to do with fitment issues.
I have never heard of any issues with crankshafts for any year V10. The major expensive issue generally has been broken exhaust studs due to not using stainless steel studs and nuts and the length of the exhaust manifold as it expands and contracts due to heat cycles. Not all or even most V10 will have this issue but it isn't cheap to repair and it happens to many people.
Early V10s prior to 2001 did have an issue with some spitting plugs. Generally at this point, it would be because someone didn't install them correctly, not because of a factory problem.
That said I have owned 2 V10's, a 1999 in an F250 and now a 2008 in my E450 RV. They are a great motor and will handle anything a motorhome could throw at them. I did have to repair the exhaust manifolds on the '99 but the 2008 is holding up great. Even if these were to fail tomorrow, I'd still think that the V10 is your best option for power in today's RVs.
