Get Verizon 4G mifi so you will have a mobile hotspot and get decent coverage wherever you are. Reception is not available everywhere but it is better than their competitors. Use a laptop computer so you can check on where to stay next, check on road conditions, etc. as well all the other usual stuff we all use computers for. Get a good GPS with larger screen. Do you have friend or family member you can do a regular check-in with?
I'd look at getting a membership in a CG network like Thousand Trails, RPI, Coast-Coast, etc. if you plan to travel around. There are normally max. stay limits and required no. of days out of their system unless you buy one of the premium plans. Used memberships can be waay cheaper than new and sometimes better too.
Google "female travel alone in RV" and you will find lots of great advice like this site: roadtreking.com.
A dog would help but can be a huge burden like when you want to go shopping.
It's not exactly safety related, but if you can't be away from TV for even a day or like the "company" of a TV, you might want to get a satellite TV setup. Not hard to set up as I just found out.
